4 Updates to The Catering Guide

The Catering Guide

The Catering Guide produced by UK Hospitality has been updated.

If you are not familiar with this industry guide it provides information on good hygiene practice and the legal obligations caterers need to comply with regards to food hygiene law. The guide also offers ideas on good practice, which will likely contribute to good food safety and customer satisfaction.

There is no legal requirement to follow the Guide as you may be able to comply with the regulations using alternative methods.

The updates to this guide are:

  1. Inclusion of food crime
  2. What to do when donating surplus food to charity
  3. Freezing and defrosting of food
  4. Chilled vacuum-packed meats – extension of shelf life
